Recipe of the Month
GRILLED SEABASS FATTOUSH SALAD
Serves 2

Ingredients:

2 fillets of fresh seabass
½ cup petit pois
Juice of 1 lemon
1 cup of chopped cucumber
2 tablespoons extra-virgin olive oil
1 tablespoon/15ml natural yogurt
1 small bag baby spinach leaves
3 small watermelon radishes, thinly sliced
Small handful fresh mint leaves, coarsely chopped
Handful chopped chives
2 slices toasted sourdough, broken into small pieces
S&P

Method:

Blanch peas in boiling salted water for 2 minutes.

Drain and place immedietely into an ice water to stop the cooking and retains color.

Whisk together lemon juice, olive oil and yogurt. Season.

Rub olive oil onto seasoned seabass fillets and grill for 4-5 minutes at a medium heat.

Combine the leaves, radishes, peas, mint and cucumber. Add dressing, and toss well to combine.

Add the sourdough chips and gently toss again. Season

Add grilled seabass and serve immediately.
