RECIPE OF THE MONTH
Caramelised Cranberry, Apple & Port Sauce

Add extra dimension and flavour to your perfect Christmas dinner with the ultimate cranberry sauce.

Perfect for making a couple of days in advance allowing you a more relaxing Christmas!

Make a caramel with 150g caster sugar & 2 star anise to a pan.

Allow the sugar to melt to form a dark caramel. Add fresh cranberries.

Watch to see the caramel blister and begin to break down the cranberries.

Peel, core and thinly slice 2 apples. Add them to the pan and season with salt and pepper.

De glaze with a good splash of port. Add the zest of an orange and a squeeze of the juice.

Cook on a low heat for 5 - 10 minutes to thicken. Store in the fridge once cooled. Serve at room temperature on the big day!
